Why Lacensebeef Exists

Lacensebeef is a small independent publication about beef, from the pasture to the pan. It is written for home cooks who want to buy better steak, for shoppers trying to make sense of grass-fed labels, and for people curious about how cattle are actually raised.

Where the cattle come in

Ranching is the part of the story most cooking sites skip. We include it because the way an animal lives, grazes and is finished shapes what ends up on the cutting board. Articles on ranching look at pasture rotation, winter feeding, water, fencing and the daily work that sits behind a package of meat.

Three areas of coverage

  • Grass-Fed Beef explains what the term does and does not promise, how flavour and fat differ from grain-finished beef, and how to read a label or ask a producer sensible questions.
  • Steak Recipes gives step-by-step cooking for ribeye, strip, sirloin, flank and leaner cuts, with attention to thickness, resting time and doneness.
  • Ranching describes land care, herd routines and the trade-offs producers face, written for readers who are not farmers.

How we write

The goal is advice a reader can use at the next dinner or the next trip to the butcher. Claims about nutrition, farming practice and food handling are checked against agricultural extension material, public food safety guidance and the producer’s own published information. When practices differ between regions or farms, the article says so instead of presenting one way as the only way.

Cooking guidance and labelling rules change over time, so older pages are reviewed and revised when they stop being accurate.

Who reads it

Some readers have never cooked a steak beyond the grill basics. Others buy a quarter of a cow every year and want a second opinion on aging or storage. Nothing here assumes professional equipment or a large budget.
